Hidden Names for Gluten on Ingredient Labels (Save This List)

I've been doing this long enough that I can scan a label in about four seconds flat. But when I was newly diagnosed, ingredient lists felt like they were written in a language designed specifically to confuse me. So here's the cheat sheet I wish someone had handed me on day one.

Gluten doesn't always say "wheat." Sometimes it's hiding under:

  • Malt / malt flavoring / malt vinegar — usually made from barley
  • Brewer's yeast — often a byproduct of beer brewing (barley/wheat based)
  • Modified food starchcan be gluten-containing depending on the source; if it doesn't specify, I skip it
  • Hydrolyzed vegetable protein / hydrolyzed wheat protein
  • Dextrin — sometimes wheat-derived
  • Natural flavoring — vague enough that it makes me nervous; when in doubt, contact the brand
  • Soy sauce / seasoning blends — see post #1, we've been over this

Here's my honest advice: labels are a starting point, not a guarantee. "Gluten-free" claims mean different things depending on whether a product is certified or just self-declared by the brand (we've actually written a whole post on that difference — worth a read if you want to understand what you're really looking at).
